  • 1 kilogram basmati rice
  • 100 grams of pure ghee or cooking oil
  • 2 Tablespoon ginger
  • 2 tablespoon garlic
  • 2 big size onion
  • ½ kilogram fresh tomatoes
  • 200 grams of yoghurt
  • 70 grams of garam masala (whole, see above)
  • 20 grams + 10 grams of red chilli flakes (cracked & whole)
  • 1 whole or 3 tablespoon pomegranate seeds fresh
  • ½ bunch coriander leaves fresh
  • 30 gms green chilli
  • 100 gms Channa
  1. In a mixing bowl add water and soak the rice in it.
  2. In another mixing bowl add warm water and Soak channa for about 45 minutes.
  3. Meanwhile slice one onion, then finely chop the ginger, garlic, tomato, green chilli & green coriander.
  4. Now in a frying pan add oil or ghee and saute sliced onion, ginger and garlic.
  5. When the ingredients starts getting browning color add tomato, yoghurt, coriander, red chilli & salt as per taste.
  6. Also add the above collected ingredients & whole garam masala along with the soaked channa dal into the copper pot.
  7. Now boil the Soaked rice in a separate pan (equal part of rice and water.) When water starts boiling, strain the rice and add it into the pot.
  8. When all the water in it is absorbed, then put lid cover on the pot & seal it for about 15 minutes for dum.
  9. Later, finely chop onion, cucumber, tomatoes and make kachumbar salad from it.
For Serving:
  1. Open the cooked dum rice, set rice in small bowls.
  2. Invert the rice bowl onto a serving plate and serve with prepared Kachumbar salad & delicious mint chutney.
